Mexican Chicken Crockpot Recipes

You can cook ANYTHING in a crockpot and there are so many different recipes online. Below are 3 of my favorites Mexican Chicken crockpot recipes.

Calories: 432 per serving

Prep Time: 15 minutes

Cook Time: 3 hours

Ingredients 

  • 2 lbs boneless skinless chicken breast halves
  • 1 (14.5 oz) can petite diced tomatoes with green chilies
  • 1 red, orange and green bell pepper, julienned
  • 1 large yellow onion, halved and sliced
  • 4 cloves garlic , minced
  • taco seasoning
  • 3/4 tsp pepper
  • 2 Tbsp fresh lime juice
  • 1 Tbsp honey
  • For serving:
  • 12 6-inch flour tortillas
  • Optional: Sour cream, cilantro, salsa, guacamole, monterrey jack or cheddar cheese

Instructions

  1. Pour half the canned tomatoes into the bottom on the pot. Top layer with hald the peppers and half the onions. Top with chicken breast
  2. Season the chicken breast with taco seasoing
  3. Top the seasoned chicken breast with the remaining tomatoes, peppers and onions.
  4. Cover and cook on HIGH for about 3 hours or LOW for 5-6 hours.
  5. Remove chicken and cut into strips.
  6. In a small bowl, mix lime juic and honey and add into cooker with chicken.
  7. Serve with warmed tortillas
  8. Optional but recommended: Top tortilla with sour cream, guacamole, cheese and salsa.

Chicken tacos

Calories: 154 per serving

Prep Time: 5 minutes

Cook Time: HIGH 4 hours or LOW 6-7 hours

Ingredients

  • 2 pounds skinless, boneless chicken breasts (fresh or frozen)
  • 1 packet taco seasoning mix (I use low sodium)
  • 1 16 oz jar salsa (use your favorite; I used a local Texas brand)
  • 1/3 cup chopped fresh cilantro
  • juice from two limes

Instructions

  1. Place chicken breast in the bottom of cooker. Sprinkle taco seasoning on top then cover with salsa, lime juice and cilantro.
  2. Place lid on top and cook on HIGH for 4 hour or LOW 6-7 hours.
  3. Remove chicken breast and shred.
  4. Serve with taco shells or tortillas.
  5. Optional but Recommended: Lettuce, sour cream, avocado, cheese

Chicken Burrito Bowl

Prep Time: 15 min

Cook Time: 4 hours and 45 minutes

Ingredients

  • 1 pound boneless skinless chicken breasts about 2 large breasts
  • 2 tablespoons of olive oil
  • taco seasoning
  • 1 teaspoon of kosher salt and freshly ground pepper to taste
  • 3 cups of low-sodium chicken broth
  • 1 15 oz can of diced tomatoes drained
  • 1 14 oz can of black beans drained and rinsed
  • 2 3/4 cups of instant whole grain brown rice
  • 1 1/2 cups of shredded Colby Jack cheese

Instructions  

  1. Place chicken in pot.
  2. Pour chicken broth over chicken breast and stir in canned tomatoes and taco seasoning.
  3. Cook on LOW for 4 hours
  4. Remove chicken breast from cooker.
  5. Turn cooker to HIGH and stir in rice and black beans. Cook for 30-45 minutes.
  6. Ad d chicken back to mixture after rice is tender. Top with cheese and cook for a few minutes until cheese is melted.
  7. Optional: serve with diced tomatoes, sour cream, avocados and salsa.
